Bin: 250 Silverado 1997 Limited Reserve Cabernet Sauvignon
Only the eighth vintage to merit the Limited Reserve label since 1981. This is an outstanding Cabernet, full of rich fruit and spice. It’s firm tannins and balanced acidity provide a full body and long concentrated finish.

White, Burgundy, Chardonnay and Chablis
Chardonnay is one of the most popular grape varietal in America. These are complex wines of tremendous character and flavor and are one of the few whites that are aged for long periods of time in small oak barrels. Chardonnay pair well with seafood, poultry or pork, as well as pastas with creamy seafood sauces. The Burgundy region of France produces some of the finest Chardonnay grapes in the world. Following the French Appellation Controlee these wines are almost always referred to by the specific region rather than simply the grape varietal. The wines tend to be more crisp and clean than the American style especially those from the Chablis region which are an excellent match with shellfish.

Pinot Grigio, Pinot Gris and other White Wines
One of the most common Italian whites, Pinot Grigio is referred to as Pinot Gris in the United States. These wines are dry, light and easy to drink. They pair well with baked or broiled fish and poultry as well as seafood pastas. Rieslings and wines from Alsace tend to be spicy and fruity. Almost always on the sweet side, they are a good companiment to clams, shrimp, and other similar seafood.

Cabernet Sauvignon, Cabernet Franc and Merlot
Cabernet Sauvignon is one of the most prestigious of all the grape varietals. It is dry, full-bodied, and highly distinctive. Young Cabernets can be sharp and tannic, however they develop a smooth, velvety complexity over time. Cabernet Franc tends to be both fruitier and sometimes more herbal or vegetative than Cabernet Sauvignon, although lighter in both color and tannins. It is often used in varietally-blended red wines but is excellent as a stand-alone varietal bottling. While its aroma profile is similar to Cabernet Sauvignon, Merlot tends to be more herbaceous overall with a lower level of acidity, resulting a softer, more lush mouth-feel. All of these wines display black currant, cherry, plum, and chocolate flavors. They pair perfectly with beef, lamb, veal, and game.

Varietally-Blended Reds
Combining the best aspects of the various varietals, these wines range from the full-bodied Cabernet/Merlot/Malbec blends to the softer style of the Rhone Valley. Zinfandels

Pinot Noir
Always dry, always delicate, Pinot Noir is full-bodied and rich with a soft, velvety texture. Pinot Noir, less tannic than the fuller bodied reds, matures quickly, reaching its peak at five to eight years. With its delicate fruit flavors and higher alcohol content, Pinot noir is best with foods that are simple and rich. It matches well with roasted or braised meats and grilled meaty fish such as swordfish or shark.

Bordeaux, Burgundy and the Rhone
In keeping with the French Appellation controlee, these wines are referred to by the region in which the grapes are grown rather than varietal. Italy, Spain and Australia
In this section we have classics like Chianti and Shiraz as well as some more unique wines that you can’t find everyday. While Spain’s Rioja region is fairly well know, Ribera del Duero is just starting to gain prominence with most consumers. From Vallpolicella, the Ripasso style of wine making involves aging the wine on the lees of Amarones, perhaps the greatest of the Italian wines. This process results in a wine that acquires the characteristics of the Amarone minus the high price tag. Excellent food wines or enjoyable on their own, these offering are perfect for anyone interested in trying something new.
